This rich and hearty Italian soup is complete comfort food at its best. It's loaded with potato chunks, bite-sized sausage pieces, crumbled bacon and spinach.
#420 (ZUPPA TOSCANA SOUP) – Need (1) Lb. mild Italian sausage (sliced into 1/2 inch pieces), (8) Cups Chicken broth, (1) Cup Half N Half, (3) Cups of bagged spinach (tough stems removed), (5) slices of bacon, (6) potatoes (thinly sliced or small cubes) and (1) Zuppa Toscana Soup Recipe Kit.
1st) In a Dutch oven/or large pot cook the Italian sausage over medium-high heat until brown and no longer pink. About 10 minutes. *Drain and set aside
2nd) In that same pot now add in the bacon and cook on medium heat until crispy, about 10 minutes. *Drain 99% of the grease but keep the bacon and about 2 TBSP. of bacon grease in the pot. Break up crispy bacon into smaller pieces.
3rd) Add in The Recipe Kit Spices and cook for about 1 minutes. Stirring most of the time.
4th) Pour in 8 cups of chicken broth into the pot and bring it to a boil.
5th) Once boiling add in the potatoes for about 20 minutes or until the potatoes are tender.
6th) Now reduce the heat to medium and pour in the heavy cream and cooked sausage. Cook for another 10 minutes.
7th) Remove from heat and mix in the Spinach into the soup. ENJOY!
