#121-Stuffed Peppers-NEED (4) Green Pepper Halves (seeded), (2) cups Water, (2) Cups rice, (2) TBSP olive oil, (4) Chopped Green Onion, (2) cans Diced Tomatoes, (1) Cup Feta Cheese (crumbled), and ONLY 4 tsp of the stuffed pepper spice mix
******Optional****** Use 1/2 - 1 lb of cooked ground beef. *See Step #4
1st) Preheat the oven to 400 degrees. Lightly oil a baking dish.
2nd) In a saucepan medium-high heat, bring (2) cups water to a boil, stir in (2) cups of rice. Reduce heat, cover and simmer for 20 minutes, stir occasionally so don't stick. Remove from heat, set aside.
3rd) Place the peppers cut upside down on baking dish, Roast about 25-30 minutes or until tender.
4th) Meanwhile in a skillet over medium-high heat, add the olive oil. When oil is HOT, add onions and 4 tsp of the recipe kit spice mix. Then stir in tomatoes and cook for 5 minutes. Finally Spoon in cooked rice, OPTIONAL beef, and stir well. Cook until heated through. Remove from heat, mix in feta cheese
5th) Remove green peppers from oven and spoon rice mixture into each pepper half.
6th) Return to oven for 5 minutes.
Serve with a delicious dinner salad
