#43 (Lebanese Lentil Soup) - Need (7.5) cups Chicken or Vegetable stock, (1) Lb. Red Lentils, (3) tbsp. Olive oil, (1) chopped medium Onion, (1/4) cup Lemon juice and (1) Lentil soup recipe kit.
1st) In a pot over high-heat, place Chicken stock or Vegetable stock and Lentils bring to a boil. Then reduce to medium-low heat for about 20 minutes.
2nd) In skillet heat olive oil over medium-high heat. Stir in Onions and Garlic (provided), cooking until the onion has softened, about 3 minutes.
3rd) Transfer Onion/Garlic into pot and add the spices (dark reddish package) Continue to simmer another 30 minutes or until Lentils are tender. If desired, add more water if becomes too low.
4th) Turn off heat source and let sit a few minutes to cool, then transfer soup to blender or use a stick blender, puree the soup until smooth. Stir in Lemon juice and Green (recipe kit) before serving. Enjoy!
Tip: Can use Green or Brown Lentils, however Red Lentils are known to have a sweeter taste.
