#189 (Cream of Asparagus Soup) - Need (2) lbs. Asparagus (trimmed and cut into 1 inch pieces), (1) cup chopped Onion, (4) tbsp. Butter, (2) cup Milk, (1) cup Sour cream, (4) cups Water and (1) Cream of Asparagus Soup recipe kit.
Vegetarian version: do not add chicken bouillon cubes or (4) cups water, instead add (4) cups of Vegetable broth
1st) In a large bowl, place (4) cups of water and (4) bouillon (recipe kit). Smash to break up dissolve broth. Set aside.
2nd) In a large pot over high heat, combine Asparagus, Onion and Only (1) cup of the chicken broth. Cover and bring to a boil. Reduce heat, then simmer uncovered until Asparagus is tender, about 20 minutes. Then place mixture in a blender to puree or use a stick blender. Set mixture aside in a separate bowl.
3rd) In the same pot, over medium high low melt the butter. Then stir in Bag A (large white recipe kit). Cook stirring constantly for 2 minutes. Whisk in remaining chicken broth and increase heat to medium. Stirring constantly until mixture boils. Then stir in Asparagus puree and milk.
4th) In a bowl, add (1) cup sour cream and a ladle full of Asparagus soup, mix thoroughly. Then add the mixture to pot of soup. Lastly add Bag B (very small white) recipe kit to pot of soup. Stirring while heating the soup to serving temperature (do not boil). Serve immediately.
