#280 (Slow Cook Chicken Tortilla Soup) - Need (2.5) 14.5 oz. cans low-sodium chicken broth (about 4.5 cups), (1) 14.5 oz. can petite diced tomatoes, (1.5) lbs. boneless chicken breasts, (3/4) cup chopped Onion, (1) 14.5 oz. can black beans (drained and rinsed), (1.5) cups frozen Corn, (1) tbsp. Lime juice and (1) Chicken tortilla soup recipe kit. Optional: Tortilla strips, Shredded cheese and Avocado chunks.
1st) Pour Chicken broth, onions and diced tomatoes into a slow cooker. Add the Spices (red recipe kit) and Chicken. Cover and cook on low heat 6 hours, or until chicken is thoroughly cooked.
2nd) Remove chicken and shred, then return to slow cooker along with black beans, corn, Cilantro (small green kit) and Lime juice. Stir. Allow to cook until heated through.
3rd) Serve with tortilla strips, shredded cheese and avocado chunks. Enjoy!

I have made this several times and I am giving the packets to my family for Christmas. Its so easy to put together for a busy family. Its been the perfect dish during this cold weather and there is always extra to take for lunch the next day. Love it.
