#186 (Chicken N’ Dumplings Soup) - Need (1) 3 lb. Whole chicken OR (3) lb. of chicken thighs, (10) cups water, (1) large Carrot chopped, (1) Celery stalk chopped, (1) Onion chopped, (1/2) cup Sour cream, (1/2) cup Milk, (1) Egg, (2) cups Self-rising Flour (see note below) and (1) Chicken N’ Dumplings recipe kit.
1st) In a large pot over medium high heat, place water, chicken, carrot, celery, onion and Bag (A). Bring to a boil, cover then reduce heat to low and simmer for (1) hour. Then turn off heat, when cool enough to handle, remove chicken from pot, then remove chicken pieces from bones, then cutting chicken into bite sized pieces.
2nd) Now turn heat back on low. Then remove (¼) cup of broth from pot and place into bowl. Then with Bag (B) add to bowl, mix well (will become a paste). Now place flour mixture into pot. Stir well.
3rd) Now add Bag (B) to pot, mx well.
4th) In a bowl, whisk together sour cream, milk, Bag (C) and eggs. Now add (2) cups self-rising flour, stir well. But do not overmix.
5th) Scoop large dollops (use ice cream scooper) of dumpling mixture into pot. Now increase heat to medium, cover pot, cook until dumplings appear light and fluffy (use a toothpick to test dumplings, they should come out clean when done), about 15 minutes.
Note: If you do not have self-rising flour, then combine in a bowl (2) cups all-purpose flour, (3) tsp. Baking powder and (1) tsp. Sea salt. Mix well.
