What a great fall/winter time soup. This is such a hearty soup that can double as meal on its own. The cauliflower and cheese are smothered in a thick broth based soup. The kit includes recipe card, no guess work.
#463- (Cheesy Cauliflower Soup) (1) small head of cauliflower or (4 ½) cups of chopped cauliflower, (7) Cups Chicken Broth, (2) Cups Milk, (2 ½) Cup sliced carrots, (2/3) Cup Corn Starch, (1) Lb. Velveeta cheese cubed (Off brand works too), (8) TBSP butter, and (1) Cheesy Cauliflower Soup Recipe Kit. Optional: Chopped Chives and cooked crumbled bacon.
1st) In a Large Soup pot over medium heat melt the butter. Now stir in The Recipe Kit spices and cook for 1-2 minutes. Stirring most of the time.
2nd) Add the Chicken Broth, Cauliflower, and carrots. Cover and cook for 20 minutes or until veggies are tender.
3rd) In a bowl add the milk and corn starch- mix until smooth (no lumps).
4th) Reduce heat to low and stir in the milk mixture and cheese. Cover and cook for another 20 minutes.
5th) Take a potato masher and mash it up and down about 6 times. Remove from heat and let rest 3-5 minutes
Tip- Once you add the soup to each bowl, top them with fresh chopped chives and crumbled bacon. Serve with your favorite bread. ENJOY!
